The cocoa tree is a small 13-26ft evergreen tree in the family of the Malvacease. Cocoa trees typically begin to bear fruit at ages 6-8 years old, while some hybrids can produce fruit at 3 years of age. Ripe Cocoa pods can be found on the trees at any time however, most countries have two periods per year that are considered “peak production times” and the cocoa harvest is spread over several months. After extraction from the pod, the beans undergo a fermentation and drying process before being bagged for delivery. We offer “fine” and “flavor” cocoa beans.
